This lovely, smooth spelt flour is comprised of three Portuguese varieties grown together as an in-field blend. It is supplied as a 100% wholegrain flour, largely at 170-220 micron fineness. We also mill the same spelt grain grown biodynamically elsewhere in Victoria, if demand depletes our stock grown in Tuerong. Both provide the flavour, soft texture and ease of digestion for which spelt is renowned, and performance capable of use at 100% in bread.

History
Our wholegrain spelt flour originates from three different spelts first imported from Portugal, though one line now dominates. We are increasing the seed of two other spelts in Tuerong - French White and Hungarian Red - but in the meantime we are happy to be milling this beautiful, high performing spelt from the Victorian wheatbelt. It can achieve decent volume loaves even at 100% Spelt and provides the outstanding flavour, soft texture and easy digestion for which spelt is renowned.
